Cotechino is a typical sausage of Moderna, usually eaten over the festive period. Its gelatinous consistency is a result of it being made predominantly from pork rind and fat, as well as pork meat and various herbs and spices. Wrapped in pancetta and ready to roast in the oven for Christmas Day to compliment your Christmas roast. Approx 500g.
